- 225 g butter room temperature
- 150 g sugar
- 55 g powdered sugar
- 2 oranges zested
- 1 tsp vanilla extract
- 2 egg yolks
- 320 g flour
- ½ tsp salt
- 50 g dried cranberries chopped
Beat the butter, sugar, orange zest, and vanilla extract until smooth.
Mix in the egg yolks. Mix in the flour and salt until just combined.
Mix in the cranberries.
Divide the dough into two equal portions. Roll each portion into a log that is about 1¾ inches in diameter. Wrap each in plastic wrap and place in the fridge for at least 3 hours.
Preheat the oven to 350℉ (175℃).
Slice the log into about ⅓ inch circles. Place them on a parchment lined baking sheet about 1 inch apart.
Bake for 10 minutes, or until the edges start to turn golden.
